It is important to note that almost all traditional Mediterranean cuisine involves fresh vegetable which takes the center stage in all dishes throughout the region. These vegetable includes the tomatoes, artichokes, onions, okra, squash, cucumbers, legumes, eggplant, mushrooms, and lettuces.
The traditional Mediterranean cuisine can involve these fresh vegetables in a variety of forms including saut?ed grilled, baked, roasted, served fresh in salads, or pureed. There is use of meat though used sparingly in most of the cuisines and normally most of the traditional Mediterranean cuisine will grill the meat. This is as a result of the Mediterranean is a rocky terrain that cannot really support herding of animals like cows, sheep, goats, chicken, and pigs. This is usually difficult for some wild game.
Some of the traditional Mediterranean cuisines involves the sheep and goat milk in form of cheese and yogurt. They use seafood as the primary source of protein appearing in many dishes. There is the use of herbs that characterizes the traditional Mediterranean cuisine. This is due to the fact that the region naturally suits the growth of herbaceous plants both indigenous and imported. The herbs used in traditional Mediterranean cuisine includes that marjoram, thyme, fennel, tarragon, oregano, garlic, dill, saffron, mint, cilantro, parsley, basil, and rosemary.
